Generously season the pork chop with salt and pepper, then roast 3-4 minutes on each side in a large sauté pan over medium-high heat or grill. If you like it more well done, continue to cook 1-2 minutes on each side, otherwise take out and let it rest 10-15 minutes. Carve against the grain, and season again. Enjoy with our scallion mashed potatoes and roasted vegetables for a farm-to-table twist on a "TV dinner"!
