As farmers, we care deeply about how food is grown and where it comes from. We ensure each ingredient we serve is farmed in the best way possible: in some cases that means it was growing on our vertical farm early that morning; in others, that it came from a local farm that is best suited to grow that ingredient. In still others, its about making sure the ingredient was grown in the place that grows it best.

  • Microgreens are a tiny form of young edible greens produced from vegetables, herbs or other plants.
  • Each of the salads we serve includes microgreens grown by Green Top Farms in our vertical garden in Queens.
  • Microgreens are both rich in flavor and nutrition, with studies showing they have anywhere from 6-10x more nutritional value than their full-grown counterparts.
  • Because we grow in a controlled environment, we can uses 90% less water, need no pesticides, and have awesome fresh produce available year round.
